
Piperonal is a naturally occurring aromatic aldehyde with a characteristic sweet floral aroma resembling heliotrope flowers. This compound melts at 37°C and boils at 263°C, exhibiting solubility in ethanol (1:4 in 95% ethanol) and most organic solvents while being practically insoluble in water. As a key fragrance ingredient, it's widely used in perfumery (violet, vanilla, and heliotrope accords) and flavor formulations (cherry, vanilla, and spice flavors). The material should be stored in airtight amber containers at ≤25°C, protected from light due to its photosensitivity. Food-grade applications comply with FCC and EU regulations (FEMA 2911).
